Are you coming to Minneapolis or doing it remotely? If you're coming to Minneapolis I highly recommend checking out Victor's 1959 Cafe for lunch. It's on 38th and Grand and is run by a Cuban couple. They serve Cuban and American breakfast and lunch. I'm something of a foodie, so I'd hate for someone to visit my hometown and think we're an endless sea of chain restaurants. Excellent!
